Marlene's Red Velvet Paleo Brownies
200grams raw beetroot ¼ cup melted coconut oil ½ cup honey 2 large eggs ½ cup raw cacao powder 1 teaspoon baking soda/bi-carb soda 2 tablespoons coconut flour Pinch of salt
Directions Preheat oven to 180c Line a 28cm x 18cm baking dish with baking paper Peel Beetroot & cut into 4 - 6 pieces Finely chop in food processor (or grate ) Add coconut oil, honey, eggs and salt; combine the ingredients Add the cacao, bi-carb soda & coconut flour; mix until combined Pour mixture into baking dish and place in oven 25 mins or until cooked Let the brownie cool and cut into bite size squares or use a round cookie cutter to make round brownies. Top with chocolate frosting and fresh rasp-berries for something a little more fancy. Makes 8 large or 20 bite size. Optional ~ Sugar Free Chocolate Frosting
10 medjool dates, pitted 2 tablespoons of raw cacao powder 2 tablespoons of coconut oil 1 teaspoon vanilla extract Pinch of salt Directions Soak dates in hot water for 10 mins to soften, drain water & place dates, cacao, coconut oil, vanilla & salt in food processor & blitz. Scrape down the sides several times. Continue until you have the consistency of frosting. This may take some time.
